How To Make Chickpea Croquettes

First let me explain a garbanzo bean is the same as a chickpea.  This recipe is a gluten free recipe and can also be made to be vegan if desired.  After making this recipe I decided you could substitute chickpeas with black beans for a variety .  I did use cilantro instead of parsley.  Serving a Greek salad topping (recipe included) over the croquettes made this a very tasty meal.

Croquettes

1 cup chickpea flour

2 tsp. ground cumin

1 tsp. chili powder

1/2 tsp. salt

1 15-oz. can chickpeas, rinsed and drained

4 green onions, chopped (1/2 cup)

1/2 cup diced red bell pepper

1/4 cup chopped fresh parsley

2 Tbs. lemon juice

1 Tbs. olive oil

2 cloves garlic, minced (2 tsp.)

  1. Whisk together chickpea flour, cumin, chili powder, and salt in bowl.  Whisk in 3/4 cup hot water.  Stir in remaining ingredients, and season with salt and pepper, if desired.
  2. Coat nonstick skillet with cooking spray; heat over meadium heat.  Scoop 4 1/4 cup dollops of chickpea mixture into skillet, and reduce heat to medium-low.  Cook 3-4 minutes, or until golden.  Flip with spatula, and cook 3-4 minutes more.  Repeat with remaining chickpea mixture. Where Have I Been?

There might be a few of you asking this question.  I have been in the process of making a move from Dayton, OH back to the Taos, NM area.  Prior to living in Dayton this past summer, my husband and I spent six seasons living in the Orilla Verde Recreation Area sixteen miles south of Taos just outside the small village of Pilar, NM.  Two summer seasons we were in this area, and then for four years we had lived in the recreation area year round.  We are back for another winter season which will take us through the month of March. What Is Reiki?

Reiki is Japanese: Rei (Ray) – meaning “The Wisdom of God” or the “Higher Power” and Ki (Key) – “life force energy.”  Reiki (spiritual life force) energy is a method directing healing vibrations to strengthen injured or unbalanced places in the body or psyche well-being.

It is a technique that aids the body in releasing stress and tension by creating deep relaxation.  Reiki energy goes to the area of the body that needs healing or balanced.  The best results are achieved when remaining calm and relaxed allowing Reiki to work.

How to Meditate

Meditation is a powerful healing modality.  To meditate means to contemplate, think, or concentrate on something.  When the mind, subconscious and soul are one, the body can heal any discord. Meditation can control mood swings, help with reducing depression, neutralize the effects of stress and increase effectiveness in various levels of activity, from preparing food to public speaking.  One can become more aware of unconscious life, including intuition and dreaming through meditation.  Meditating can reduce panic attacks, anxiety, reduce levels of chronic pain, reduce incidence of headache and reduce obesity.

How I Helped A Cancer Survivor

Roberto came to me after being diagnosed with Head and Neck cancer 1 1/2 years ago.  He was scared and knew I had gone through breast cancer and had recently received a B.S. degree in Holistic Nutrition.  He had heard my story on how I changed my lifestyle and diet to repair my health.  Roberto asked what he could do to improve his health and what change he needed to make with his lifestyle.  I suggested he consider making healthier choices in his diet, along with giving him some ideas of antioxidant supplements that help build the immune system.  We also talked about reducing stress in his life.  I gave him some ideas about listening to calming CD’s with nature sounds, relaxing music, and doing some deep breathing.  Sometimes stress is a very big factor in cancer diagnosis.  Roberto felt this could of been the case with him along with spending time in smoky establishments and also helping fight wildfires without using protection. 7 Immediate Ways to Better Your Health

  • Exercise – We all know exercise is good for us, it’s a matter of taking time to do it.  I always suggest taking baby steps in making changes with any lifestyle modification.  Try starting out doing 10-20 minutes of some sort of stretching, aerobic movement, or strengthen exercise.  A little exercise is better than none.  Exercise will aid the body in oxygen, flexibility, toning, and longevity.  Exercise aids in the absorption and elimination of the food we eat.
  • Drink water – The body can loose over a quart of water a day through the lungs, skin, and kidneys as urine, ensuring toxins to be eliminated from the body.  Keeping yourself hydrated aids in the blood purification process which can help reduce the risk of disease in the future.  Six to 8 glasses a day of fluids is an adequate amount but try making that mostly water.  Other types of beverages can sometimes do more harm than good.  Herbal teas can be a good alternative.

How I Shifted My Lifestyle Following The Discovery of a Disease – Part II

After cutting out sugar and using Essiac Tea I started changing my eating habits.  I didn’t make drastic changes right away.  I took what I like to call “baby steps.”  Some things I stopped cold turkey, like coffee.  I was amazed how fast I was able to stop drinking coffee once I learned how caffeine was damaging to my immune system.  It only takes 72 hours to get caffeine out of ones system.

Alcohol was not to be had either.  Number one it is full of sugar and then I knew from common sense it just wasn’t good for my body.  Because I had a weakened immune system I needed to do everything in my power to take control of my health.

I became a vegetarian after learning meats contain immune system poisons like dioxin and PCB, along with hormones and antibiotics.  It is also high in fat.  Legumes became the norm for most meals.  I was making my own veggie burgers with black beans.  I would try mimicking dishes you could buy already made up, by buying a small portion to see what ingredients was being used to make the dish.  My husband and I began to eat fresh whole foods ignoring the processed foods that lack nutrition and full of toxins.

When I was told I had ductual carcinoma in-situ (breast cancer) my reaction was panic.  How was I going to beat this disease?The first two suggestions I was given was to stop eating sugar and use Essiac Tea.  I immediately started practicing these suggestions.

Why stop eating sugar you might ask?  Well I read where cancer cells use sugar as a fuel to grow.  The pancreas releases insulin which is the hormone that sends sugar into the cancer cells.  The more sugar one eats the higher the insulin level.  I also read that high insulin levels is one of the biggest risk factors and promoters of breast cancer.  The sugar also impairs the immune system which needs to be in tip-top shape to fight against cancer cells.
