How To Make Chickpea Croquettes

First let me explain a garbanzo bean is the same as a chickpea.  This recipe is a gluten free recipe and can also be made to be vegan if desired.  After making this recipe I decided you could substitute chickpeas with black beans for a variety .  I did use cilantro instead of parsley.  Serving a Greek salad topping (recipe included) over the croquettes made this a very tasty meal.

Croquettes

1 cup chickpea flour

2 tsp. ground cumin

1 tsp. chili powder

1/2 tsp. salt

1 15-oz. can chickpeas, rinsed and drained

4 green onions, chopped (1/2 cup)

1/2 cup diced red bell pepper

1/4 cup chopped fresh parsley

2 Tbs. lemon juice

1 Tbs. olive oil

2 cloves garlic, minced (2 tsp.)

  1. Whisk together chickpea flour, cumin, chili powder, and salt in bowl.  Whisk in 3/4 cup hot water.  Stir in remaining ingredients, and season with salt and pepper, if desired.
  2. Coat nonstick skillet with cooking spray; heat over meadium heat.  Scoop 4 1/4 cup dollops of chickpea mixture into skillet, and reduce heat to medium-low.  Cook 3-4 minutes, or until golden.  Flip with spatula, and cook 3-4 minutes more.  Repeat with remaining chickpea mixture. Qigong

I recently attended my first class of Qigong.  The “Qi” in Qigong is pronounced chee, and the “gong” part is pronounced gung as in lung.  I have done Tai Chi in the past, which is a form of Qigong, so I was familiar with the different movement.  Documented history of Qigong goes back at least 2,500 years but it is said Qigong has been practiced over 5,000 years. Struggling With An Exercise Routine

I am just like everyone else when it comes to exercise, once I stop it is difficult for me to get back into a routine.  Even though I know how important exercise is for my health and well being.  The worst thing I could do is get out of the habit of just “doing it.”

In March, 2008 I was hired for a temporary job with the Bureau of Land Management (BLM) in Taos, NM that lasted one year.  I allowed myself to get off schedule, not getting up earlier in the morning to get 20-30 minutes of floor exercise, and walking 20-30 minutes sometime throughout the day.  I did join a gym, but even found it tough to make it a habit to attend.  Beating myself up with negative thoughts about how I needed to get into a routine of exercising was not going to help, so I conscientiously reminded myself to work on a plan to get back on schedule when the time was appropriate.  Not letting that appropriate time get too far out of reach. 5 Ways To Stay Healthy During Stressful Times

  • Breath Work – Bringing in oxygen and exhaling carbon dioxide with deep breathing can help with emotional situations and moods.  Slowly inhale a deep breath, then exhale making it comfortable and feeling natural.  Do  between 8-10 times.
  • Stop the use of caffeine and stimulant drugs – They make a person anxious and jumpy which interrupt good rest, relaxation and sleep only to escalate the stress.
