How To Make Moist Cinnamon Raisin Bars

- This recipe uses applesauce instead of oil for the moisture content of the bars. By doing so you cut down the amount of calories in the recipe. I used about 3/4 cup sugar when the recipe called for 1 cup, which I really think I could of used even less…maybe 1/2 cup. I also used whole wheat flour which worked fine for this recipe. The applesauce I purchased had cinnamon mixed with it, and I found it not to be too much cinnamon. The bars have a good cinnamon, raisin taste and were quite moist.
Cinnamon Raisin Bars Recipe
1 cup boiling water
1 cup raisins
2 cups flour
1/2 tsp salt
1 tsp baking sode
1 cup sugar
1/2 cup applesauce
1 tsp ground cinnamon
1/4 tsp nutmeg
1 egg
Directions
- Combine the boiling water and raisins in a large bowl. Allow to cool to room temperature.
- Preheat oven to 375 degrees.
- Sift together the flour, salt, and baking soda. Set aside.
- To the cooked raisin mixture, add the sugar, applesauce, spices and egg. Beat well (I used an electric beater).
- Mix in the dry ingredients to the raisin mixture.
- Pour into a greased 9-by-13-inch pan and bake for 20 to 25 minutes, or until a toothpick comes out clean.
- If desired, frost with a simple vanilla icing (see recipe below)
Makes 12 bars
Vanilla Icing
2/3 cup powdered sugar
1 tsp vanilla
2 tbsp milk
Whisk together until smooth. Spread on the cinnamon raisin bars.
