Indian Spinach Dip Recipe

  • This recipe has just the right combination of spices to give it that Indian flavor.  It you are in a hurry and need something to “whip” up fast I highly recommend this recipe.  It reminds me of guacamole with an Eastern Indian twist.

Indian Spinach Dip

4 cups spinach (6 to 7 oz.)

1 large avocado

1/2 Tbs. lemon juice

1 small clove, garlic, peeled

1/2 tsp. low-sodium seasoned salt

1/4 tsp. curry powder

1/8 tsp. minced fresh ginger

Dash chili powder

Dash cayenne pepper

Dash cumin

  • Blend all ingredients in food processor or blender until smooth.

Makes 2 cups

I used frozen spinach that I let thaw.  I also used sea salt instead of seasoned salt.  Serve with fresh vegetables or nacho chips.

How To Treat Seasonal Affective Disorder (SAD)

  • Do you become depressed when there is a lack of sunshine?  You may have seasonal affective disorder (SAD).  Seasonal affective disorder (SAD) usually develops during the dark winter months mostly with symptoms of depression.  The feeling of depression lifts with the upcoming spring and summer seasons.  A person who is affected by SAD can experience poor concentration, fatigue, and extreme craving of carbohydrates.  The feeling of much need sleep can be experienced even though the sleep is rarely refreshing.
  • When we get a lot of sunlight a substance in our body called melatonin is secreted.  When there is not enough sunlight keeping the melatonin levels in check it makes it difficult to drag ourselves out of bed.  Also cortisol, our stress hormone, can possibly rise which contributes to depression, insomnia, fatigue, and a decline in the immune system.  Lower levels of serotonin may occur, which play a part in the development of depression.  The length of bright sunlight is what directly affects the production of serotonin.

How To Make A Vegetarian German Goulash

  • Making this recipe is a good way to try tempeh for those that want to learn how to cook with it.  It has good flavor and is easy to make.  You can use any type of noodle or rice to serve the goulash over.  For variety I have used different types of mushrooms when making this recipe.

German Goulash

8oz. soy tempeh (see preparation below)

2 Tbsp. oil oil

1 lb. mushrooms, halved

1 onion, chopped

2 cloves minced garlic

2 lb. red potatoes, unpeeled, cut in chunks

1 cup chopped fresh parsley

8 oz. artichoke ribbon noodles

salt and pepper to taste

1 Tbsp. paprika

2 cups water

2 Tbsp. unbleached flour mixed in 1/4 cup water

How To Make a Dreamy Apple Pie

This recipe is one my husband made up recently.  He had been trying to perfect an apple pie that he thought was more healthy than other recipes he had tried in the past.  I must say it was quite delicious.  The crust is yummy without using lard or vegetable shortening.  I hope you decide to give it a try.

  • Ginger should always be on your shopping list.  It is one of the most all-purpose herbal stimulants.
  • Herbal stimulants combined with other herbs promote functions of eliminating, maintaining or building.  The body is warmed when using herbal stimulants, along with boosting circulation and breaking up obstructions such a mucus.
