How to Make a Pesto Type Salad Dressing

This recipe is very similar to the salad dressing Outback Pizza in Taos, NM uses for their salads.  They are known for their gourmet pizza, and this delicious salad dressing.

Outback Pizza Salad Dressing

4 cups oil

1 Tbsp thyme

1 Tbsp oregano

2 Tbsp garlic

1/2 cup soy sauce

3/4 cup Parmesan cheese

1 cup fresh basil

1/2 cup red wine vinegar

pinch of fresh parsley

Blend all ingredients in food processor or blender on high.

Warning: Be careful when preparing this recipe making sure you have a large enough food processor or blender.  I usually spit the recipe in half.  The dressing also does well when frozen.

How to Benefit from Calcium

How to Prepare Easy Miso Soup

This recipe is full of vegetables with added miso.  If you have never used miso I would recommend trying this recipe for starters.  It has a good flavor and is quick and easy to make.

Easy Miso Soup

2 tsp canola oil

3 slices fresh gingerroot

1 large onion, thinkly sliced

2 carrots, thinly sliced

2 stalks celery, thinly sliced

4 cups coursley chopped cabbage

4 Tbsp miso

2 scallions, very thinly sliced

dark-roasted sesame oil to taste

Instructions:

  1. Heat the canola oil in a large pot.
  2. Add the ginger and the onion; saute over medium heat for 5 minutes
  3. Add the carrots, celery, and cabbage.  Stir well, saute for a few minutes.
  4. Add 5 cups water, bring rapidly to a boil, then lower heat and simmer, covered, until vegetables are just tender, about 10 minutes.  Remove from heat.
  5. Place the miso in a bowl, add a little of the broth, and stir well to a smooth cream.  Add more broth to thin the mixture, then add it to the pot of soup.  Let rest for a few minutes.
  6. Serve in bowls with the raw scallions.  You may wish to remove the ginger slices before serving, and you can add a few drops of the sesame oil to each bowl if desired.

I use barley miso when making this recipe.  Never let the miso boil.

This recipe is from the book “8 Weeks to Optimum Health” by Dr. Andrew Weil, M.D.  You should be able to prepare the soup in about 30 minutes.

How to Make a Greek Salad Without the Lettuce

This salad has that good flavor a Greek salad consist of and is easy to make taking little time.  There will still be some warm days of September when this salad may be just what you need for a refreshing taste.

Greek Salad

1 English cucumber

1 red pepper

1 yellow pepper

Pint of cherry tomatoes

Tofu Thai Curry
